Blueberry Iced Latte

Blueberry and coffee is one of those flavour combos people smugly hashtag #IYKYK every time they put it together (kk that might be me lol). This BLUEBERRY ICED LATTE is a celebration of that flavour pairing in a tall, delicious, gorgeous glass! I highly recommend topping it with dashes of cinnamon not just for garnish but as a flavour boost because cinnamon intensifies the flavour of blueberries. #IYKYK 😉

One batch of the quick blueberry sauce is enough to make 4 servings of BLUEBERRY ICED LATTE (see recipe head note below for storage tips). Whenever I can, I will use wild blueberries over ordinary blueberries. Wild blueberries have 2x the antioxidants and 33% more deep purply blue anthocyanins, a flavonoid with potent antioxidant capacity (source). Wild blueberries have long been linked to brain health. The easiest way to access wild blueberries is in the frozen form, which is super fresh because they’re frozen at their peak.

1.why does the recipe call for “wild blueberries”?

The easiest way to access wild blueberries is in the frozen form, which is super fresh because they’re frozen at their peak.

2.how do I store leftover blueberry sauce?

Leftover blueberry sauce can be refrigerated for 3-4 days or frozen for at least 3 months with no issues. For freezing, I suggest dividing into ice cube trays and defrost as needed to make future BLUEBERRY ICED LATTES. A 1/4-cup cube mold would make perfect portions for this but of course, you can freeze them in a standard ice cube tray (2-tablespoon-sized cubes) in which case, you would use 2 cubes of blueberry sauce for each serving. This recipes makes about 250ml or 1cup of blueberry sauce which is enough to make 4 servings of BLUEBERRY ICED LATTE.



BLUEBERRY ICED LATTE

Latte recipe written for 1 serving. Blueberry sauce makes enough for 4 servings.

INGREDIENTS

For the Blueberry Iced Latte:

¼ C quick blueberry sauce (recipe below)

1 C ice

1 C unsweetened oat milk or other milk of choice

1-2 shots of espresso

Optional sweetener such as maple syrup or simple syrup to taste (I like it unsweetened)

For the blueberry sauce (makes ~250ml or 1 cup):

2 C fresh or frozen blueberries, preferably wild blueberries — see head note 1

¼ C sugar (or maple syrup for refined sugar free)

2 tbsp water

1 tbsp fresh lemon juice, from half a small lemon

METHOD

To make the blueberry sauce: Add all ingredients into small pot and bring to a simmer over medium-high heat. Simmer until blueberries are softened, about 3-4 minutes. Taste and add more sweetener if needed. Use an immersion blender (or small blender) to puree the sauce until fairly smooth. Blueberry sauce keeps refrigerated for 3-4 days or freezes well for 3 months (tip: freeze them in ice cube tray for easy defrosting and use later).

To make Blueberry Iced Latte: Add ¼ cup of blueberry sauce into bottom of a tall glass. Add ice cubes. Fill with oat milk. Top with 1-2 shots of espresso. Sprinkle a few dashes of ground cinnamon on top.
