Easy Spicy Peanut Sauce for Dumplings (or Noodles)

I am a big fan of peanut butter — from a simple peanut butter and jam toast, to Dan Dan Mein, to satays. One day I was craving a peanut butter sauce to eat with my dumplings and this EASY SPICY PEANUT BUTTER SAUCE FOR DUMPLINGS was created and tweaked until it is now my go-to. I love it with noodles as well! Free free to use my recipe as a guide and tweak for yourself, adding more tang or more spicy, thinning it out with a touch more with water, etc. Sometimes I add a splash of Chinese black vinegar too if I’m in the mood.

EASY SPICY PEANUT SAUCE FOR DUMPLINGS (OR NOODLES)

Recipe serves 1. Scale up as needed. This sauce is also delicious with noodles.

INGREDIENTS.

1½ tbsp smooth peanut butter

1 small garlic clove, grated

1 tsp grated ginger (frozen ginger is easiest to grate — always keep a knob in the freezer)

1½ tsp soy sauce

1 tsp rice vinegar

1 tsp your favourite Chinese chili oil, more or less to taste

½ tsp sesame oil

¾ tsp sugar

3-4 tbsp of hot water or dumpling cooking water

A generous sprinkle of toasted sesame seeds

METHOD.

Directly in the serving bowl, whisk all ingredients except toasted sesame seeds together until smooth. Add cooked dumplings. Sprinkle toasted sesame seeds on top. Feel free to thin the sauce out with more water as needed.

  • HOW TO PLEAT:

    Start by attaching opposing ends of the wrap (i.e. the 12 o’clock to the 6 o’clock part of the circle) and press gently, so it sticks together there at just that point, but leaving the rest of the edges not touching. From that centre point, begin working outward down the left of the half-circle all the way to the outer end, folding a series of 3 to 5 slightly-overlapping pleats. The direction of the fold is always towards the centre. Pinch or tuck in the end to seal. Repeat the same pleats on the right side, from centre point to the outer end. Pinch or tuck in the end. Note that when making each pleat, only one side (the side facing away from you) of the wrapper is manipulated i.e. the inward facing side of the wrapper does not move.
