Miso Honey Mustard Chicken Skewers
Grilling season is upon us and the forecast says its gonna be a hot one this year. My family is loving on these juicy MISO HONEY MUSTARD CHICKEN SKEWERS and I bet so will you. Chicken is marinaded in a tasty mixture of miso, Dijon mustard, honey, garlic, soy sauce, mirin, paprika and s&p. Although you can stop there (why would you?) when you can brush them with a mouthwatering sauce of melted buttahhh, mayo mustard and chopped fresh parsley for an irresistible finishing move.

1.what is miso paste?
Miso paste is staple in Japanese cuisine, made through a process of fermenting soy beans with salt, koji and often other ingredients such as rice. There is white, yellow and red miso paste. I prefer white miso paste for this recipe as it is most mild but yellow miso also works if you add just a tad less. You will find miso paste at all East Asian supermarkets and increasingly at conventional supermarkets as well. They tend to be next to the tofu in a refrigerated section close to produce.
2.what is mirin?
Mirin is similar to sake in that it is a rice wine but with higher sugar and less alcohol. The real deal mirin is made from sweet rice and rice koji. That is what you should look for in the ingredients list, along with water and sea salt. Ideally, avoid the imitation version (aji-mirin) containing added sugar, glucose syrup and/or corn syrup. You can find mirin in Japanese and other East Asian grocery stores, online (e.g. Amazon) and health food stores. I’ve had a harder time finding proper mirin in the international aisle of well-stocked grocery stores which tend to stock aji-mirin. Eden Foods (an American company) and Koyo Foods (a Canadian company) both make organic mirin available in the U.S. and Canada. If you can’t find mirin, substitute equal parts sake / sugar / rice vinegar for an approximation, or substitute rice vinegar or lemon juice alone since it is not a large quantity called for in the marinade.
3. can this be cooked in the air fryer?
Yes! Chicken thighs are amazing in the air fryer. Preheat air fryer to 390f. Place skewers or loose chicken pieces (in batches as needed) and air fry 8 minutes, brush with finishing sauce and air fry another 5-7 minutes (for a total of 13-15 minutes) or until internal temperature reaches 165f. Remove skewers from air fryer and brush a final time with the finishing sauce. Check doneness early the first time you make them to avoid overcooking.

MISO HONEY MUSTARD CHICKEN SKEWERS
Recipe serves 4-6 | Prep time 15 minutes | Cook time 15 minutes | Total time 30 minutes (excluding passive marinating time)
INGREDIENTS.
For the marinated chicken:
2lb-2½lb boneless skinless chicken thighs, cut into 1” cubes
3 tbsp Maille Dijon Originale fine Dijon mustard
2 tbsp white miso paste - see note 1
2 tbsp honey
2 tbsp oil
1 tbsp soy sauce
1 tbsp mirin - see note 2
3 cloves garlic, minced
¾ tsp kosher salt (use 1½ tsp if Diamond Crystal brand)
½ tsp sweet paprika
Black pepper to taste
Finishing sauce to brush on:
2 tbsp melted butter
2 tbsp Maille Mayonnaise de Dijon
1 tbsp Maille Old Style mustard
3 tbsp chopped fresh parsley
METHOD.
Coat cubed chicken thighs well with marinade ingredients and let marinade at least 30 minutes but ideally 3-4 hours up to overnight in the fridge.
Soak 9-10 wooden skewers in cold water for 30 minutes before threading marinated chicken pieces onto skewers, close enough for pieces to touch snugly.
Preheat grill to medium-high heat (400f-425f). While grill is preheating, mix ingredients for the finishing sauce and set aside near the grill, along with a brush and serving platter. Transfer chicken skewers onto it and grill for a total of 10-12 minutes, turning once until chicken is golden all over with some char-y edges. Keep the lid closed as much as possible during grilling. In the last minute or so, brush half of the finishing sauce onto the chicken. To check doneness, pull a piece of chicken off and insert a meat thermometer in the center – it should register 165f. Transfer skewers to serving platter, and slather the remaining finishing sauce while skewers are still hot. Serve with a leafy salad and warm bread.
